SQUASH WITH MIXED VEGETABLES
(KOOSA MAA KHODAR)
INGREDIENTS:
- 1/4 cup semne.
- 1 cup sliced
onions.
- 3 cups koosa
pulp, chopped.
- 2 cloves
smashed garlic.
- salt.
- pepper.
- 1 tomato,
peeled and chopped.
- 1 green
pepper, chopped.
- 1/2 teaspoon
thyme.
- 1/4 cup
parsley, freshly chopped.
STEP
BY STEP:
- Saute the onions in the semne, until softened.
- Add the garlic and the chopped koosa and sauté them
until they almost get well-done.
- Add the remaining ingredients and mix.
- Cover the pan and cook for a few minutes more.
- Add some salt and pepper if you want.
- Uncover the pan and increase the flame to reduce the
cooking juices.
