SQUASH WITH MIXED VEGETABLES
(KOOSA MAA KHODAR)

 

INGREDIENTS:

  • 1/4 cup semne.
  • 1 cup sliced onions.
  • 3 cups koosa pulp, chopped.
  • 2 cloves smashed garlic.
  • salt.
  • pepper.
  • 1 tomato, peeled and chopped.
  • 1 green pepper, chopped.
  • 1/2 teaspoon thyme.
  • 1/4 cup parsley, freshly chopped.

 


 STEP BY STEP:

  1. Saute the onions in the semne, until softened.
  2. Add the garlic and the chopped koosa and sauté them until they almost get well-done.
  3. Add the remaining ingredients and mix.
  4. Cover the pan and cook for a few minutes more.
  5. Add some salt and pepper if you want.
  6. Uncover the pan and increase the flame to reduce the cooking juices.
