STUFFED CARROTS
(JAZAR MIHSHI)

 

INGREDIENTS:

  • 12 large carrots( choose them fat and short).
  • Filling Ingredients:
    a) small piece ground lamb fat.

    b) 250g ground lamb or beef.

    c) 3/4 teaspoon salt.

    d) 1/2 cup rice, rinsed.

    e) 1/4 teaspoon nutmeg.

    f) 1/2 teaspoon spices(pepper).

  •  Sauce Ingredients:
    a) 1/4 cup tomato paste.

    b) 2 cups of water.

    c) 1 clove garlic, crushed with 1 teaspoon salt.

    d) 1 teaspoon tamarind paste.

 


 STEP BY STEP:

  1. Keep the carrots at room temperature overnight.
  2. Scrape and wash them, cut off the stem end.
  3. Remove out the cores of the carrots, by using a koosa corer.
  4. Mix the filling ingredients altogether and stuff the carrots 2/3 full.
  5. Mix the sauce ingredients altogether in a large saucepan very well until it becomes one mixture.
  6. Drop in the carrots and keep them until they get well-done (about an hour).
