OMELETTE WITH SQUASH
(MFARRAKET KOOSA)


INGREDIENTS:

  • 3 tablespoons semne.
  • 1/3 cup onion chopped.
  • 1/2 small spoon salt.
  • 2 cups squash(koosa) chopped into small cubes.
  • pepper.
  • 1 teaspoon cinnamon.
  • 100g meat ground beef or lamb.
  • 4 eggs, beaten.
  • oil.

 


 STEP BY STEP:

  1. Fry the meat in the semne.
  2. Add the chopped onion to the meat and sauté them together.
  3. Fry the koosa in the oil until it gets the pink color (half fried).
  4. Add the koosa to the meat and onion, and cook it for a few minutes longer (until it is well-done).
  5. Sprinkle some salt, pepper and the cinnamon.
  6. Pour on the eggs and keep them to scramble.
  7. Reduce heat, and cook as long as desired.
