OMELETTE WITH SQUASH
(MFARRAKET KOOSA)
INGREDIENTS:
- 3 tablespoons semne.
- 1/3 cup onion
chopped.
- 1/2 small
spoon salt.
- 2 cups
squash(koosa) chopped into small cubes.
- pepper.
- 1 teaspoon
cinnamon.
- 100g meat
ground beef or lamb.
- 4 eggs,
beaten.
- oil.
STEP
BY STEP:
- Fry the meat in the semne.
- Add the
chopped onion to the meat and sauté them together.
- Fry the koosa in the oil until it gets the pink color (half
fried).
- Add the koosa to the meat and onion, and cook it for a few
minutes longer (until it is well-done).
- Sprinkle some salt, pepper and the cinnamon.
- Pour on the
eggs and keep them to scramble.
- Reduce heat,
and cook as long as desired.
