OLIVE CHICKEN
(DAJAJ MAA ZEITOON)

 

INGREDIENTS:

  • 2 breasts of chicken, boned.
  •  2 onions, chopped.
  • 1/4 cup olive oil.
  • 1/4 teaspoon cayenne pepper.
  • 1 teaspoon cumin.
  • 10 drops Tabasco.
  • 1/4 teaspoon paprika.
  • 3 tablespoons fresh lemon juice.
  • 2 cloves garlic, minced.
  • 1/4 cup of water.
  • 1/3 cup green olives, chopped.
  • 1/2 cup fresh parsley, chopped.
  • 2 cans (small) new potatoes, drained.

 
MARINADE INGREDIENTS:

  • 2 tablespoons olive oil.
  • 3/4 teaspoon salt.
  • 2 tablespoons cornstarch.
  • 1 egg white.
  • 1/4 teaspoon cumin.
  • 1/4 teaspoon black pepper.
  • Pinch cayenne pepper.

 Garnish: Whole green olives.

 


 STEP BY STEP:

  1. Cut the chicken into thin strips, about 6cm. long and 1cm. wide. It will be much easier if the chicken is partially frozen.
  2.  Mix the marinade ingredients all together, mix the chicken with them, keep them aside for half an hour.
  3.  Bring a large skillet, sauté the chicken with the olive oil until it takes the white color and is very tender. Remove the chicken pieces and keep them aside.
  4.  Saute the onions until they become transparent.
  5. Put in with the onions the spices, garlic, Tabasco, olives, lemon juice, potatoes and the water.
  6. Cover and cook for about 7 minutes.
  7. Return the chicken to the pan, and put in the parsley.
  8.  Serve it on a platter, garnished with whole green olives.
