BAKED SQUASH IN WHITE SAUCE
(KOOSA BI SALSA BEIDA)


INGREDIENTS:

  • 500g koosa(squash).
  • Filling Ingredients:
    a) 2 tablespoons pine nuts(fried).

    b) 100g ground beef or lamb(fried).

    c) 1/4 teaspoon Arabic mixed spices.

    d) 1/2 teaspoon salt.
  • White Sauce Ingredients:
    a) 2 tablespoons flour.

    b) 2 tablespoons semne.

    c) 2 cups of milk.

    d) 1/8 teaspoon pepper.

    e) 1/2 teaspoons salt.

 


 STEP BY STEP:

  1. Cover the koosa with salted water until half cooked.
  2. Remove the water and slice the koosa in half length wise.
  3. Scoop out the cores of the koosa by using a spoon.
  4.  Bring a baking dish and rub it with semne and arrange the koosa in it in one layer.
  5. Mix the filling ingredients all together and stuff the hollows of the koosa.
  6. Prepare the white sauce: melt the semne first, and then put the flour in it, mix and cook for at least one minute, pour the milk and sprinkle some salt and spices. Keep them for about 4 minutes.
  7. Pour the white sauce over the koosa.
  8.  Bake at 350f, until it is well-done (about 1 hour).
