ETHIOPIAN STEW
(ZUGNEE)

 

INGREDIENTS:

  • 1/4 cup semne.
  • 2 onions, chopped.
  • 3 cloves garlic crushed with 1/2 teaspoon salt.
  • 1 can(180g) tomato paste.
  • 2 tomatoes, chopped.
  • 1 chicken, cut up OR 1/2 kilo beef or lamb, cubed.
  • 1 cup of water.
  • 1+1/2 tablespoons red ber-beri powder.

 


 STEP BY STEP:

  1. Saute the onions in the semne until softened.
  2. Put in the garlic and cook for 1 minute more.
  3. Add the ber-beri powder and keep it for about 3 minutes.
  4.  Add the tomatoes, the tomato paste and the water and mix very well, cook for 15 minutes.
  5.  Add the meat and some more water, cover.
  6.  Keep it until it boils, reduce heat and keep it covered.
  7.  The chicken will be done in about 45 minutes, the beef or lamb needs about 2 hours.
  8.  Taste and add some salt and pepper.
  9.  Serve it with salad, and it is also good with rice.

 NOTICE:

You can add some vegetables to the stew such like potatoes or green beans.
