BOKHARI RICE WITH CHICKEN

 

INGREDIENTS:

  • salt.
  •  pepper.
  • 1 chicken, cut up.
  •  3 tablespoons semne.
  •  1/4 cup tomato paste.
  •  1 onion, chopped.
  •  1 teaspoon salt.
  •  1/2 cup of water.
  •  1/2 teaspoon cumin.
  •  1/2 teaspoon cinnamon.
  •  1/4 teaspoon ground cardamon.
  •  1/8 teaspoon black pepper.
  •  1/4 teaspoon cloves.
  •  3 cups of water.
  •  3 carrots, sliced.
  • 1+1/2 cups rice, rinsed.
  •  1/4 cup semne.

 


 
STEP BY STEP:

  1. Wash the chicken and dry it.
  2.  Sprinkle some salt and pepper.
  3.  Saute the chicken in the 3 tablespoons of semne until brown, remove it from the pan.
  4.  Saute the onions in the same semne until soft.
  5.  Add the tomato paste, 1/2 cup of water and the spices, mix very well.
  6. Put in the carrots and the chicken and cook for 3 minutes, by mixing them all together.
  7. Add the 3 cups of water, cover and keep it until the chickens  are almost done.(about half an hour).
  8.  Measure the liquid, and add water to equal 3+1/2 cups.
  9.  Add the 1/4 cup of semne and the rice, cover and keep them for about half an hour.(until the rice is done).
