BOKHARI CHICKEN AND VEGHETABLES
(DAJAJ BOKHARI)
INGREDIENTS:
- water.
- 1 chicken, cut
into pieces.
- 2 tomatoes,
peeled and chopped.
- 2 onions,
chopped.
- 2 turnips.
- 4 small
potatoes.
- 1 hot red
pepper.
- 8 carrots.
- 1 teaspoon
salt.
Garnish:
Yoghurt, at room temperature.
Lemon, halved.
Black pepper.
STEP
BY STEP:
- Wash the chicken.
- Put it in a
large pot and cover it with water.
- Keep it until
it boils.
- Add the onions
and keep them boiling for 5 minutes.
- Put in the
tomatoes, and cook for another 5 minutes.
- Peel the
potatoes, carrots and turnips and cut each one into half.
- Add them to the pot along with the salt, black pepper
and red pepper.
- Cook until the chicken and vegetables are well-done(about45
minutes).
- Add some salt and pepper if you want.
- Take out the
chicken and vegetables and put them in a platter.
- Pour the broth into a large bowl.
- Garnish each
plate with lots of fresh black pepper and top it with yoghurt and a squeeze of
lemon.
