BOKHARI CHICKEN AND VEGHETABLES
(DAJAJ BOKHARI)

 

INGREDIENTS:

  • water.
  • 1 chicken, cut into pieces.
  •  2 tomatoes, peeled and chopped.
  •  2 onions, chopped.
  •  2 turnips.
  •  4 small potatoes.
  •  1 hot red pepper.
  •  8 carrots.
  •  1 teaspoon salt.

Garnish: Yoghurt, at room temperature.

               Lemon, halved.

               Black pepper.

 


 STEP BY STEP:

  1. Wash the chicken.
  2.  Put it in a large pot and cover it with water.
  3.  Keep it until it boils.
  4.  Add the onions and keep them boiling for 5 minutes.
  5.  Put in the tomatoes, and cook for another 5 minutes.
  6.  Peel the potatoes, carrots and turnips and cut each one into half.
  7.  Add them to the pot along with the salt, black pepper and red pepper.
  8.  Cook until the chicken and vegetables are well-done(about45 minutes).
  9. Add some salt and pepper if you want.
  10.  Take out the chicken and vegetables and put them in a platter.
  11.  Pour the broth into a large bowl.
  12.  Garnish each plate with lots of fresh black pepper and top it with yoghurt and a squeeze of lemon.
